Macaroni Salad Recipe For A Delicious Side Meal

Macaroni salad recipe allows you to create a quick and easy side
meal, as an adjunct to the main meal. Your main meal may be a
roast, washed down with Italian red wine. Almost everyone I know
likes pasta, there are even pasta restaurants, helping meet the
demand for pasta. One of the more popular versions of pasta is
macaroni. Making a quick macaroni salad will please visitors to
your home.
If you do not want to make a predictable casserole side dish,
then a macaroni side salad may be your best option. Especially
if you have a family and you need to cook a delicious side meal.
Creating A Low Fat Macaroni Salad
You can always make your own variations, after you learn to cook
from the standard recipe. If you want to make a low fat version,
then you replace the cheddar cheese with low fat cheese and leave
out the mayonnaise altogether or replace it with olive oil. There
is also the option of using low calorie mayonnaise, but I do not
like the taste of low calorie mayonnaise and use olive oil instead.
There are many ways to make changes to the standard macaroni
salad recipe.
The Classic American Side Dish
Macaroni salad is a classic American side dish that finds a welcome
spot at any summer cookout or pot luck. Cooks find it an easy
make-ahead dish – in fact, the flavor improves when made a day
in advance.
This not only frees up preparation time on party day, but an
overnight stay in the frig allows the flavors to ‘marry’, bringing
out the taste of each of the ingredients. This popular side dish
goes well with almost any barbecued meat, perfect with burgers,
ribs and the ever-present hot dog.
Simple And Quick To Please Your Guests
Here we have a macaroni salad recipe that’s simple and quick
to make and will garner applause from all of your guests. This
recipe serves 8-12 people, in generous portions. If you have leftovers,
it keeps nicely for 2-3 days, refrigerated.
Easy macaroni salad recipe
--------------------------
8 ounces of semolina wheat macaroni, cooked according to package
instructions
2 stalks of celery, finely sliced
1 medium red Spanish onion, diced
1 cup of fresh parsley, chopped
1 6-ounce can of sliced olives
1 large jar of pimientos, chopped
2-3 Tablespoons of apple cider vinegar
Mayonnaise, to taste
1 dash of cayenne pepper
1 cup of grated cheddar cheese to garnish
Directions:
1. Cook the macaroni with a tablespoon
of oil in the water, until done. (The oil prevents the macaroni
from sticking together.) Drain well in a large colander. Set aside
to cool.
2. While the macaroni is cooking,
cut up the celery, onion and pimientos. Chop the parsley. Drain
the olives. Put the vegetables and parsley in a large serving
bowl and mix thoroughly. Add the apple cider vinegar and stir
until blended.
3. Stir the cooled macaroni into the
bowl, mixing thoroughly.
4. When it comes to adding mayonnaise,
there’s no set amount to a macaroni salad recipe – it’s a matter
of personal taste. Add the mayonnaise, one cup at a time, until
you have a pleasing consistency and flavor balance.
5. Sprinkle your finished macaroni
salad recipe with a judicious dash of cayenne pepper. Cayenne
pepper adds a nice zip and also helps bring out the flavors of
the other ingredients.
Cover the macaroni salad with plastic wrap and refrigerate. Just
before you’re ready to serve, grate the Cheddar cheese in a separate
bowl. Set the Cheddar cheese next to your macaroni salad to let
guests garnish as they wish.
This macaroni salad recipe can be prepared, from start to finish,
in less than 30 minutes. The piquant flavor makes this easy to
fix macaroni salad a hit with party-goers, from kids to your elderly
Great Aunt. If you do have any leftovers, they make good lunch
additions or snacks. But I wouldn’t count on having leftovers!
An Italian Themed Dinner Party
A macaroni salad recipe is perfect for an Italian night dinner
party. You can make your own pizza, or place a party order with
your favorite pizza eatery. While you are placing the order, you
may think about your guests and what they really like to see at
your dinner party. You may know some of your guests quite well
and shared many meals together, while with other guests you may
not be too familiar with their food choices.
I sometimes contact my guests before they arrive and ask them
if they have any special requests. For example, there is a couple
who are vegetarian, so I always ensure I include vegetarian versions
of the main meal. I have even ordered a vegetarian pizza and they
were delighted and surprised that they did not have to go home
on an empty stomach.
Pleasing Your Guests On Special Diets
There are a few guests who are on special diets, one is on a
gluten free diet and the other is on a low fat diet. I always
make gluten free and low fat meals, whenever I invite these guests
to my dinner parties.
I have even made a gluten free and low fat version of the macaroni
salad, by taking out some of the gluten and high fat ingredients
and swapping them with alternative low fat and gluten free ingredients.
For example, to make the low fat version, I left out the mayonnaise
and replaced it with olive oil. I also replaced the cheddar cheese
with low fat cheese.
My guests were pleased with the food and some even asked for
my version of the macaroni salad recipe.
